Simple, light and fruity reds with a pale, lightly coloured ruby robe, smooth tannins, an airy palate with moderate acidity, and understated aromas of red fruits. Rustic, discreet profile. Nearly extinct, preserved in INRAE varietal collections for its heritage value; testifies to the pre-phylloxera ampelographic diversity of the South-West. The wine region of Cava

Spain's star traditional-method sparkler, the Iberian equivalent of Champagne. Three Catalan grapes blended: Macabeo (apple, freshness), Xarel-lo (body and herbaceous notes), Parellada (elegance and floral finesse). Chardonnay and Pinot Noir also allowed. From fruit-driven Brut to Gran Reserva (30 months on lees) with brioche and toasted notes.

The word of the wine: Solera

A method of maturing practiced in Andalusia for certain sherries, which aims to continuously blend older and younger wines. It consists of stacking several layers of barrels; those located at ground level (solera) contain the oldest wines, the youngest being stored in the barrels on the upper level. The wine to be bottled is taken from the barrels on the lower level, which is replaced by younger wine from the upper level, and so on.
