The wine region of Colli di Faenza

Romagnan DOC (1997) on the hills of Ravenna and Forlì around Brisighella and Faenza, clay-limestone soils. Sangiovese is the red king: ruby with intense cherry, raspberry, violet and floral-spicy hint, balanced tannins and persistent finish. Trebbiano as lively white with white flowers and green apple. Pinot Bianco, Chardonnay and Pignoletto as complements.

The wine region of Emilia-Romagna

Kingdom of Lambrusco: fresh, fruity sparkling reds (blackberry, cherry, violet), from gourmet dry to convivial off-dry, perfect with local charcuterie. World's best-selling sparkling wine on the Emilia side (Sorbara, Grasparossa, Salamino). East, Romagna: supple fruity Sangiovese, Albana (Italy's 1st white DOCG, 1987) ample and almondy. Also red Gutturnio and white Pignoletto.

The word of the wine: Flavours

There are generally four so-called fundamental flavours: acidity, bitterness, sweetness and saltiness. The first three are considered to be the building blocks of the structure of wines. They are perceived by the taste buds that cover the surface of the tongue.
