Round, supple whites with a soft palate, showing discreet aromas of apple, pear, fresh almond, white flowers and brioche notes. Moderate acidity, light finish. Star of Crémant d'Alsace (fine, taut sparkling) and base of Edelzwicker. Grown in Germany (Weissburgunder, Baden-Württemberg), northern Italy (Pinot Bianco, Alto Adige), Austria and Luxembourg. South Africa's coolest region on the Hottentots Holland heights (1 hr from Cape Town): Sauvignon Blanc signature as king white — racy and mineral with chiselled notes of citrus, green apple, passion fruit, herbs and a flint touch, signature lively acidity. Elegant tense Pinot Noir as king red (cherry, raspberry, earth, spices) and fresh Chardonnay as complement. WO Cape South Coast, 250-400 m altitude, ocean mists, varied soils (sandstone, granite, shale).

Sharp, iodised Sauvignon Blanc (Walker Bay, Constantia), balanced Chardonnay. Reds: emblematic Pinotage with roasted aromas (coffee, plum, smoke), firm Cabernet Sauvignon, spicy Syrah.

The word of the wine: White winemaking

White wines are obtained by fermentation of the juice after pressing. A pre-fermentation maceration is sometimes practiced to extract the aromatic substances from the skins. White wines are normally made from white grapes, but can also be made from red grapes (blanc de noirs). The grapes are then pressed as soon as they arrive at the vat house without maceration in order to prevent the colouring matter contained in the skins from "staining" the wine.
