The wine region of Bourgogne Hautes-Côtes de Nuits

Cool high-altitude sister (300-500 m) west of the Cote de Nuits: signature Pinot Noir as red — lively and fruity with notes of cherry, raspberry, redcurrant, wild strawberry and a floral touch, supple tannins and the signature freshness of altitude, accessible young. Chardonnay as a taut, mineral white (citrus, green apple, white flowers, flint), preserved acidity. Aligote as a complement. AOC (1961), 16 villages, limestone and marl on slopes, cooler climate than the Cote, ages 3-6 years.

The word of the wine: Disgorging (champagne)

This is the evacuation of the deposit formed by the yeasts during the second fermentation in the bottle, by opening the bottle. The missing volume is completed with the liqueur de dosage - a mixture of wine and cane sugar - before the final cork is placed. For some years now, some producers have been replacing this sugar with rectified concentrated musts (concentrated grape juice) which give excellent results. A too recent dosage (less than three months) harms the gustatory harmony of the champagne.
