Nearly extinct, preserved in INRAE varietal collections for its heritage value; it bears witness to the pre-phylloxera ampelographic diversity of the South-West and is among the patrimonial varieties under study. Rare French black variety, once grown in the South-West.

The wine region of Bex

Swiss sub-region of Chablais in Vaud (predominantly gypsiferous soils, near-Valais climate, active föhn at harvest end): Chasselas is the emblematic signature white — elegant and precise with flint and gunflint mineral notes from the gypsum, white flowers, citrus and a taut saline finish. Syrah and Merlot ripen fully thanks to the föhn — structured and spiced. Pinot Noir as complement, crystalline alpine expression.

World reference for Chasselas (~60% of the vineyard). Mineral, delicate whites with signature notes of green apple, citrus, white flowers, fresh almond and a saline touch, low acidity and a silky palate. Maximum expression in Lavaux (UNESCO 2007) on Lake Geneva terraces. Also La Côte, Chablais and the iconic Dézaley.

The word of the wine: Primeur

Said of wines from the last vintage and, by extension, wines of the year, fruity and easy-drinking, put on sale on the third Thursday in November.
