Structured, elegant reds with a deep ruby robe, firm tannins and lively acidity. Intense aromas of black cherry, blackberry, black pepper, spices, violet and balsamic notes. Dense palate, fine ageing potential. Nearly extinct, it was saved in the 1970s by the winemakers of Prepotto and is the signature of Colli Orientali del Friuli DOC and Friuli Colli Orientali Schioppettino di Prepotto DOC. Native Friulian variety; its name evokes the crackling (schioppettino) on the palate.

Burgundy's second historic white grape, long unloved then rehabilitated. Lively, taut dry whites with signature notes of lime, green apple, white flowers, fresh almond and a saline touch, vivid acidity and a crisp finish — the traditional base of Kir but increasingly serious single-parcel cuvées too. Direct, thirst-quenching style, served chilled with oysters, snails and goat's cheeses. ~1,700 ha, mainly in the Hautes-Côtes and Bouzeron (its dedicated cru).
