Whites with many faces: mineral and taut at Chablis (lemon, green apple, flint), opulent and buttery at Meursault and Puligny-Montrachet (hazelnut, brioche, yellow fruits), tense and chalky in Champagne (Blanc de Blancs). Also vinified sparkling and widely exported (Sonoma, Margaret River, Casablanca). A Burgundian variety, a cross of Pinot Noir × Gouais Blanc, half-sibling of Aligoté.

Historical heart of South African viticulture (Wine of Origin 1973) encompassing Stellenbosch, Constantia, Paarl, Franschhoek and Swartland, Mediterranean climate tempered by Atlantic breezes. Cabernet Sauvignon is the signature red: structured with blackcurrant, black cherry, plum, eucalyptus and a smoky touch, firm tannins. Pinotage, the unique local variety, brings dark fruit and mocha. Chenin Blanc and Sauvignon Blanc as vibrant whites.
