Greek PGI (1989) around Thebes in Boeotia (~3,400 ha), clay-limestone soils on the cool slopes of Mount Kithairon. Savatiano is the dominant autochthonous white signature: dry and taut with intense notes of citrus, stone fruit, white flowers and a mineral touch, vinified dry or as resinous Retsina. Aromatic Roditis as complement. Mouhtaro, an autochthonous red with red fruits and a spicy touch.
