A historic pillar of medium-dry Madeira (one of the island's four classic noble grapes) where it develops complex oxidative notes. Also as structured dry whites in Douro DOC and Australia (Hunter Valley). Native Portuguese grape, unrelated to Spanish Verdejo.

Signature Shiraz as red: peppery and fresh with signature notes of blackberry, black cherry, black pepper, eucalyptus and a mineral touch, firm tannins and taut acidity — more elegant than southern sunny Shiraz. Firm Cabernet, ample Chardonnay. "Strange Birds" alternative speciality: saline Albariño, dense Saperavi, floral Fiano, smoky Pinotage.
