The wine region of Broke Fordwich

GI sub-region (1997) of the Lower Hunter (NSW) crossed by the Fordwich Sill — a plug of red volcanic clay from ancient underground eruptions. Semillon as the flagship with a citrus-forward profile, less herbaceous, more citrus and leaner than Lovedale, with long bottle ageing. Shiraz as complement. Volcanic draining soils with a cellular structure absorbing moisture, alluvial and sandy-loam.

The wine region of Nouvelle-Galles du Sud

Australia's 2nd wine state with diverse regions. Iconic Hunter Valley: a Sémillon unlike any other, straight, low-alcohol dry whites with vivid citrus when young, evolving over 10-20 years toward honey, toast and lanolin. Medium-bodied Hunter Shiraz, spicy and earthy (leather, red fruits). Also round Chardonnay and aromatic Verdelho.

The word of the wine: Fermentation

The process by which grape juice becomes wine, thanks to the action of yeasts that transform sugar into alcohol.
